Notes From The Commissary -
Sauce - Sauce has been a topic of conversation for some time. Although the situation has been taken care of, we'd like to share an explanation of things with you & thank you for your patience.

Dear Ken,
For the first time in a number of years, this past summer’s tomato harvest delivered tomatoes that were below historical averages in soluble solids. This ended up being a state wide problem, forcing suppliers to process at higher solids to achieve the correct bostwick (thickness). All of our customers were affected by this problem. Although we used the same amount of oil in our recipe the thickness of the product made it so the oil does not always “float” to the top.
Pastorelli Foods is very apologetic for the problems you’ve been having and can only stress that we will do everything in our power to help alleviate this from happening next year.

Health Matters - According to a report from The American Medical Assn., there is no proof that antimicrobial soaps will prevent infection, and actually do more harm than good. They are not left on surfaces long enough to kill all bacteria, and instead kill only the weaker bacteria, leaving the stronger ones to flourish. These stronger bacteria can even resist antibiotics. The AMA belives that normal cleansers, soap and warm water do as good a job. So, when keeping your stores clean, wash surfaces with soap and water first, then sanitize. Leave the sanitizer on the surface long enough to kill any bacteria, generally 30 seconds. If using a prepared sanitizer, read and follow the manufacturers instructions. - From Prevention Magazine

1. roll out large dough 2. fold in half 3. cut out half-heart with pizza cutter (remember doing this with construction paper in grade school?) 4. Place on large screen and unfold - you'll probably have to do a little pulling to shape it perfectly 5. top like a medium 6. fits in medium box 7. cut at your discretion - we cut in in 3rds from top to bottom (makes a broken heart!) and twice across. 8. We charge as a medium - I suppose we should charge a premium, but I'd rather sell more and get the word out.
